The Filipino cuisine has been around since the 16th century. It is a slow cooked meal that consists of meat marinated in soy sauce, vinegar, garlic, bay leaves and black peppercorns.
There are many versions of this recipe that use a variety of meats like chicken, pork, beef and even different forms of seafood.
The most popular renditions of this meal are typically made with chicken or pork.
Regardless of the protein used, the ingredients in the marinade add an amazing depth of flavor to this dish.
It is typically served alongside a steaming pile of white rice. The sauce from the slow cooked meat melds with the rice to create a perfect bite every time.

Recipe
- In a pan over medium heat, add the pork and let cook for a few minutes until browned.
- Add all your aromatics and sauté for a couple of minutes.
- Add the soy sauce, vinegar and enough water to cover the pork.
- Bring the heat down to medium low, cover and allow to simmer for 45 minutes to an hour.
- Bring the heat back up and allow to cook until the sauce is thickened, similar to a glaze.
- Serve over a plate of white rice and enjoy!
