A Classic Italian Antipasto – Bruschetta

Bruschetta is a classic dish originating in Italy that has been around since the 15th century.

This tasty treat is usually served as an antipasto, also known as an appetizer and is perfect for the summer months.

The best part is it only takes about 15 minutes to put this entire recipe together. 

The flavors in this recipe come from juicy, sweet tomatoes mixed with extra virgin olive oil, garlic and basil. Optionally, people tend to top it with freshly grated parmesan and balsamic glaze. 

This entire mixture is then topped over the toasty bread which is infused with fresh garlic and sometimes drizzled with a little extra virgin olive oil! 

It can be seen on nearly every Italian restaurant menu and is a great dish to enjoy with friends or family.

Recipe

  1. In a medium bowl, mix the tomatoes, extra virgin olive oil, vinegar, minced garlic, basil and salt and pepper to taste.
  2. Mix well and set aside.
  3. Preheat the oven to 400 degrees fahrenheit.
  4. On a baking pan, spread out the slices of bread. Coat with olive oil.
  5. When the oven is ready, let toast until golden brown, about 3-4 minutes per side.
  6. Take it out, and lightly brush each piece with the fresh garlic clove.
  7. Top with bruschetta mixture.
  8. Optionally, top with grated parmesan and balsamic glaze.
  9. Serve and enjoy!

Ingredients

  • 5-6 roma tomatoes, diced
  • 1/4 cup basil leaves, finely chopped
  • 2 tbsp virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1-2 garlic cloves, minced
  • Salt and pepper, to taste
  • 1 baguette, sliced into 1-inch thick pieces
  • Olive oil, to coat bread
  • 1 clove garlic, for toasted bread
  • Grated parmesan, to garnish (optional)
  • Balsamic glaze, to garnish (optional)
