Beware of making this pasta recipe… You might end up having to make it for your friends and family everyday because they will not stop asking for it. 

This is what happened to me when I first made this pasta for a party.

I wanted to add a twist to my recipe by incorporating both sweet and spicy elements. The tangy flavors from the tomatoes and bell peppers gives the meal some freshness. 

The ginger garlic paste is essential for this recipe because it’s what gives the dish the South Asian feel. (This is the secret ingredient, BTW). 

The creamy and cheesy texture of the sauce glazing over every noodle is what gives us comfort. 

Consider making an extra batch!

Recipe

  1. Place a pan over high heat and add some vegetable oil and 3 tbsp of ginger garlic paste to the pan. 
  2. Place a pot over high heat and put in your pasta of choice once the water starts to boil. Cook the pasta for 12 minutes. I prefer using fettuccine or spaghetti noodles. 
  3. Add minced garlic to the pan. Let the garlic and paste spread and “season” the pan for 5-7 minutes. 
  4. Chop up 2 red tomatoes, 1 red onion, 1 jalapeño pepper, 4 green chilis, 1 red, 1 orange and 1 yellow bell pepper.
  5. Add the vegetables to the pan and sauté with the lid covered for 10 minutes. 
  6. Add 1 can of tomato paste and a pinch of salt and pepper to the vegetables. 
  7. Mix in 1 tbsp of basil powder, 1 tbsp of oregano, 1 tbsp of garlic powder, 1 tbsp of ginger powder, 1 tbsp of onion powder, 2 tbsp of red chili powder, 1 tbsp of chili flakes, 1 tsp of garam masala, a dollop of ketchup, and 3 tbsp of sugar.
  8. Grab some heated starch water from the pasta and incorporate it into the sauce. 
  9. Add some heavy cream and mozzarella cheese to add the creaminess component.
  10. Combine the sauce into the pasta and add more salt, pepper and a sprinkle of chili flakes.
  11. Serve and enjoy!!
