  1. In a large pot, heat a little oil over medium heat.
  2. Add the chicken and cook until browned on all sides, about 5 minutes per side.
  3. Remove the chicken from the pot and set aside.
  4. Add the onion and bell pepper to the same pot and cook until soft and translucent, about 5 minutes.
  5. Add the garlic and ginger and cook for 1 minute.
  6. Add the sweet potatoes, and stir to combine.
  7. Add the seasonings, chicken broth, peanut butter, tomato sauce and peanuts and stir to combine.
  8. Bring the mixture to a boil.
  9. Reduce heat to low, cover the pot, and let it simmer for about an hour and a half, or until the sweet potato is tender, the chicken is cooked thoroughly and the sauce thickens.
  10. Optionally, add cilantro and stir.
  11. Serve hot with rice or crusty bread.


  • 1 lb chicken thighs
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 1/2 inch piece ginger, minced
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp salt
  • 1 tsp black pepper
  • 32oz chicken broth
  • 1 cup smooth peanut butter
  • 1 can tomato sauce
  • 1 cup roasted peanuts
  • 1 medium sweet potato, peeled and diced
  • 1/4 cup chopped cilantro (optional)
